Six Bean Soup





1 Bean project package (abt. 6-8 servings):

1/3 cup of adzuki beans
1/3 cup of green split peas
1/3 cup of black beans
1/3 cup of red beans
1/3 cup of navy beans
1/3 cup of yellow split peas

1 tbs dried parsley
1 tbs paprika
1/2 tsp cayenne pepper
salt and pepper to taste

7 cups of water

1 onion, minced
1 clove garlic, minced
1/2 can of chunky or crushed tomatoes
2 tbs fresh or frozen basil

Pre soak all beans overnight, then discard the soaking water.
In a small pressure cooker, cook onion and garlic with oil, if needed, then add all ingredients, except the tomatoes and basil.

Close the cooker and bring contents to a boil until the cooker valve closes and the pressure indicator shows 2 rings. (Compare instructions for your cooker) Lower temperature and cook for 10 more minutes. After that turn off the stove and let the contents simmer until the pressure is reduced and the cooker can be opened. Add the crushed tomatoes and basil to soup and let sit for some time to blend. ©2011Mighty Forks
