Mushroom Toast

 

 

 

 

For 4 Slices:
4 slices of strong bread, toasted
1 diced onion
2 garlic cloves, minced
1-2 cups diced fresh cremini mushrooms or other mushrooms
1 tbs minced olives
1/s tsp nutmeg
1 tbs fresh rosemary, minced
pepper and salt replacer (Mrs Dash)
1 tbs olive oil
2 tbs feta cheese or daya veg cheese

1 tbs chives

Toast the bread and place it in a pan or griddle to lightly toast.
Saute onion, garlic and chopped scallion rings in a heated frying pan with oil if needed. Add the chopped mushrooms, olives, nutmeg and rosemary and cook for 12 minutes. Add pepper and salt replacer to taste.
Cover bread slices with the mushroom mix, sprinkle with crumbled cheese and chives and grill until the cheese is melting. Also works well if you use the oven broiler for a 2-5 minutes.©Sabineart 2012
