For 2 Servings:
1 medium onion, chopped
1 clove garlic, minced
1 tbs Earth Balance butter replacer
1 big bunch kale, cleaned, stems removed and chopped
1 tsp salt
1 cup vegetable stock (1 vegan (Rapunzel) broth cube 1 liter water)
1/2 tsp nutmeg, ground
2 sausages (Field Roast Chipotle) or a milder version if Chipotle is too hot!
Potatoes (or yams)
Heat water in a pot and bring to boil, add kale and cook until the kale gets soft.
Remove from water with a slotted spoon and put aside.
Peel and quarter potatoes and cook in some of the kale water until soft.
Heat the Earth Balance (Butter replacer) in a skillet, add onions and garlic and cook for 5 minutes or until onions are transparent. Roughly chop the kale add to the onions and cook for some minutes.
Then add salt, pepper, nutmeg and broth. Simmer for about 30-45 minutes.
Meanwhile add oil to a small frying pan, and grill the sausages until nicely browned.
Short before the kale is done, add the sausages, simmer for some time together. Serve with the cooked potatoes. ©2012Sabineart.com
