For 2-3 servings
1/2 cup whole wheat orzo pasta
1 Tbs Earth Balance or veg butter
1 med onion, chopped
1 clove garlic, minced
2 scallions cut in rings
1 cup of cremini mushrooms, cleaned and sliced
1/2 zucchini summer squash, cubed
2 med heirloom tomatoes, cubed
2-3 Tbs salt free spice (such as Mrs. Dash)
1/3rd cup of walnuts, ground
2 Tbs nutritional yeast
2 Tbs of basil, chopped
For the pasta, bring a pot of water to boil, add the orzo and cook until pasta is al dente. It usually takes longer if you have whole wheat pasta.
Melt the veg butter in a pan, add the onion and garlic and wait 1-2 minutes till transparent. Add the scallions, mushrooms, zucchini and saltfree spice, cooking for abt. 5-10 minutes till somewhat tender but not overcooked.
Blend sauteed vegetables and orzo in a bowl.
Add ground walnuts, nutritional yeast and basil and stir. Serve some basil for garnish. ©Sabineart 2012
