For ca. 4-5 pancakes:
1 cup all purpose flour, unbleached
1 cup whole wheat flour
3 Tbs baking powder
1 tsp salt
2 cups of almond milk
1 tsp vanilla extract
3 pitted dates, chopped
1 soft and ripe banana
3 Tbs olive oil
Maple syrup, Berries & Fruit, chopped nuts or chocolate shavings for topping
Combine dry ingredients ( flour, baking powder, salt) in a bowl and mix well.
In a blender, blend wet ingredients: almond milk, dates, vanilla extract, some oil and banana until smooth.
Mix the dry ingredients into the wet ingredients. Add water if needed to form a smooth batter.
Add a thin layer of oil to the pan if needed. Ladle the batter in a hot pan or on a griddle (abt. 5″ diameter), smoothen batter and flatten pancake that it bakes faster. Cook for 2-3 minutes each side. Serve with toppings of choice… ©2012Sabineart.com
