Corn pancakes (savory)

For ~8 Pancakes:

2 tsp maple syrup
1 Tbs lemon or lime juice
1 cup non dairy milk
1/2 cup organic* corn meal (or self ground kernels)
1/2 cup whole wheat pastry flour
1/2 tsp baking powder (organic)
1/4 tsp baking soda
1/4 tsp fine salt
2 tsp cajun spice mix

* I recommend buying corn and soy products only organic, to avoid GMO.

Whisk maply syrup, milk and lemon juice in a blender.
Measure dry ingredients and combine, then pour slowly, blending into wet ingredients. Let batter mix rest in a cool place for min. 10 minutes.

In a nonstick skilled, cook 3 Tbs batter to small pancakes. Cook with covered pan for abt. 4-5 minutes, then turn and cook some more time on the second side.  © adapted from ‘The Happy Herbivore’
