Bavarian Potato Salad (warm)

For about 4 Servings:
1.000 g potatoes
2 onions, cubed
3 Tbs olive oil
6 Tbs Vinegar
125 ml Broth
1 tsp hot mustard
Salt / Pepper to taste
1/4 cup chives, chopped
1/4 cup parsley, chopped

Wash potatoes and cook for abt. 20 minutes or until tender but good to slice.
Rinse in cool water, peel and set aside until cooled down, then cut in thin slices. Transfer into a bowl and set aside.

Method 1
Heat oil in a pan, add onions, then remaining oil, vinegar, broth and mustard and add salt and pepper to taste. Heat and let boil.
Pour the dressing over the potatoes, add the fresh chopped herbs and blend carefully into the mix. 

Method 2                                                                                                                                           Cube onions. Heat little oil in a pan and cook the onions until transparent. Then add the potato slices and saute until nicely browned.                                                              Prepare the dressing in a different pan, blend remaining oil, vinegar, broth and mustard and add salt and pepper to taste. Heat and let boil. 

When the potatoes are ready, transfer into a bowl, pour the dressing over the potatoes, add the fresh chopped herbs and blend carefully into the mix. ©2013 Sabineart.com
