Most convincing Un-Tuna Salad


For abt. 3 cups (good for 6-8 regular bread slices):

1/4 cup walnuts or pecans, chopped
1 cup of dried garbanzo beans (chickpeas), soaked overnight and cooked
(you may also use dark garbanzos or fava beans)

1/2 green apple (granny smith) cored, cut in small cubes
1 stalk of celery, chopped
1/2 medium onion, cut in small cubes (red onion or even scallions for milder flavor)
1 small sour pickle, finely chopped
2 Tbs veg. Mayonnaise (veganaise)
2 Tbs fresh dill, finely chopped
2 Tbs fresh lemon juice
1-2 Tbs Dulse flakes or (Kelp granules) or little sea salt.
1/2 tsp curry powder
Ground black pepper to taste

Chop walnuts or pecans coarsely in a food processor. Remove and chop the cooked and cooled down garbanzo beans. Blend with all other chopped ingredients on a bowl. Adjust seasoning to taste. Serve decorated with dill on salad or spinach leaves and with a strong rye or artisanal whole wheat bread. A great buffet item. ©
