Quick mango cream


For 2-3 Servings:

1 cup of ripe mango sliced, cubed or chopped
1/2rd  package of silken (or regular) tofu
1 cup of ripe mango sliced, cubed or chopped
2 Tbs maple syrup
1/2 tsp ground ginger
1/2 tsp ground cinnamon
1/4 tsp vanilla powder
1 pinch of salt
chocolate shavings and mint leaves for decoration

Place the tofu with it’s liquid in a food processor, blend and add the maple syrup. When a smooth consistency is reached, add the other ingredients and blend until smooth and creamy. If you save some mango pieces from the processor earlier, you can stir them under the finished cream later, to give it some texture of fruit.

Scoop the cream in decorative dessert glasses and chill either in the freezer for a short time or for abt. an hour in the refrigerator. Decorate and serve cold. ©2013sabineart.com
