Green Goodess creamy dressing






For ~1 cup of dressing (multiple servings)
3 Tbs Vegenaise or other vegan mayonnaise
1/2 cup of fresh chopped cilantro or fresh mixed herbs, roughly chopped
        (i.e. goutweed, parsley, basil, mint, rosemary, terragon, mayoram, chives…)
1 scallion, roughly chopped
3 Tbs fresh lime juice
1/2 green jalapeño, roughly chopped
1 dash coarse sea salt (omit, if your vegan mayonnaise is very salty)
1/2 medjool date
2 Tbs extra virgin olive oil or 1/2 avocado (avocado to balance oily mayonnaises)
1 tsp chopped fresh herbs for decor

Combine ingredients in a blender, add oil only if needed at the end; chop until foamy smooth.
Stir in the hand chopped herbs for ‘looks’ if you don’t want a too homogenous green sauce. Store in a container in the refrigerator for up to a week. Shake before use over green and mexican style salads. ©
