For 1 loaf:
1 cup chopped, dried dates
1/2 cup amaranth soaked overnight or sprouted
1 cup boiling water
3 tbs egg replacer in 1/2 cup warm water
1/2 cup of honey or vegan sweetener such as maple syrup
3 tbs olive oil
1 tsp vanilla extract
2 tbs carob
2 cups whole wheat flour
2 tsp non-aluminium baking powder
1 cup mixed walnuts and hazelnuts, chopped
Soak dates in boiling water for 15 minutes. Then chop in your blender. Blend egg replacer into warm water, add vanilla extract, oil, sweetener and dates and keep beating the mixture again.
Blend dry ingredients, flour and baking powder, add the wet mixture plus amaranth and the chopped nuts. Blend all ingredients well and pour into a baking paper lined loaf pan.
Bake at 350˚F for 75 minutes. Leave loaf to dry in oven during cooldown.
Cut when loaf is cooled and firm. ©Mighty Forks 2011
