For about 1 cup of dressing:
1 carrot, peeled and roughly chopped
1 scallion, cleaned and chopped
1 Tbs sized slice fresh ginger, peeled
1/2-1 tsp piece fresh turmeric, peeled (or more ginger)
1 Tbs miso bean paste
2 Tbs apple cider vinegar
1 Tbs maple syrup, dark
1 Tbs sesame oil
3 Tbs olive oil virgin, extra
3 Tbs filtered water
1/2 tsp sea salt
1/2 tsp fresh ground pepper
Add all ingredients into a high speed blender and pulse until smooth.
The blend will last a couple of days in the refrigerator, shake before use.
