Massaged Kale Salad





1-2 Servings

1 bunch of kale (4 cups)
1/4 tsp salt
1 Tbs lime juice
1 Tbs extra-virgin olive oil
3 drops of toasted sesame oil (optional, not raw)

2 Tbs dried raisins (unsulphured, soaked several hours in hot water)
2 stalks of scallions, sliced

1/4 cup daikon radish cut into sticks
or 1/4 cup cleaned and cut bell peppers
or 1/4 cuo cubed heirloom tomatoes

Drain and rinse the rehydrated raisins and chop them into smaller pieces, set aside
Blend salt, oil and lime juice and massage in the chopped kale, until it gets an evenly intense color and reduces its volume.
Add all other ingredients and blend well. Let sit for a couple of minutes.
Add cashew mayonnaise or cashew sauce with serving.©
