Cauliflower Tabouli/Tabbouleh

For about 4 side servings:
½ medium head of cauliflower
¼ cup chopped parsley
¼ cup chopped cilantro (or mint)
2 medium tomatoes diced
½ red pepper (organic) chopped
¼ cup kalamata olives, pitted and chopped
½ red onion, chopped (or 2 chives, chopped)
¼ cup of lime juice
3 Tbs olive oil
3 cloves garlic, minced
½ tsp salt
1 tsp cumin
½ tsp smoked paprika
dash cayenne pepper

Roughly chop cauliflower, don’t discard stems. Place all with chopped herbs in the food processor and pulse until broken down do couscous like consistency.

Blend the chopped cauliflower mix with the rest of the chopped ingredients. Season to taste, store in refrigerator for about 2 days. ©2014Sabineart.com
