A twist for a dessert

EmpanadDSC_3688You can make these little zapatitos, if you have some empanada dough left. They are a simple blend, and closed like dumplings, as the filling is a bit more wet. Great to use up some overripe, even frozen bananas. See recipe

Morning Glory

What’s for breakfast? Without regular farmer’s markets suddenly we ran out of our favorite morning breads. After some conventionally sweet breakfast fare and morning pancakes, we needed our own bread. So I veganized recipe for banana bread. Instead of chocolate chips, I used 2 tbs of home made rum raisins. This time I adjusted to more raising ingredients to counter the sluggish portion of Whole Wheat flour. Even though I replaced the high sugar content with sucanat and brown sugar, plus some molasses, as the bananas were too fresh, it is still very, very sweet although it tastes nice. Goal is to get riper bananas that are able to provide the main sweetness, reduce the fat and work on Gluten reduction. See recipe

Sunday mornings

I always loved waffles and pancakes! The yummy pictures in the Veg Starter Kit once convinced me that Veg life can be fun and tasty! So easy to follow, with ingredients that are at home without much planning. On Sunday mornings, maybe outside if weather allows, the waffles and pancakes are a great treat, especially after a long run. My pancake recipe is here…

Brendan Brazier, professional Ironman Triathlete from Vancouver, BC  is also vegan. His early research in the nutritional field has been circling around how to improve performance with nutrition, by minimizing the stress that ordinary and high acidic foods may cause to the body.
