Oh, my Godess…

GreenDSC_4354For Shakespeare, ‘Salad Days’  were not a diet. Likewise with ‘Green days’ he described a youthful inexperience. Sounds good to stay young and green, and eat that salad too!
When making salad dressings, I tend to settle with the tried and true. But it is great to look over the fence sometimes. With summer herbs in abundance, try a creamy herb based ‘Green Godess’ variety, such as the Mexican Creamy Cilantro dressing. If prepared and bottled ahead of time, you have a quick alternative. This vegan version of the dressing goes well with green salads and mexican salads with bean or corn, also works if you have anything but cilantro… See recipe.

Shrooming weather

PicklesDSC_3846Monday, we had a Spring Flood.  When I went down to the train, I took an umbrella, in less than 10 minutes, the rain turned into a flood, water was shooting down Maple Avenue and left me wading to the station. I was wet up to my knees. Within 3 minutes we watched water filling the tracks, luckily it did not rise to the platform, the trains were in time. At Grand Central, people all looked dry and outside was just a little drizzle. How do you explain the wet suburbian-rat look?

Throat soothers and scrubbers

Out of the blue, I caught a summer flu. Magazines are now big on light summer soups. The pastel colored and easy to make, often pureed soups, are a great starter for dinner and perfect for lunch and use the abundance of squash and corn. cilantro, hot peppers and lime add Southern flavor. My corn soup also worked great to soothe my sore throat, hot chillies added a scrubbing and beat the flu – forget chicken soup. Another variety I tried today was a summer squash soup with several kinds of squash, zucchini and corn. See recipe

A Super Bowl – or how do veg’ns get enough protein

Real men need protein!  Usually the last argument against a plant based diet, as nutrition pyramids list animal food equal to protein, the Avantgarde may add soybeans to the list. Other foods that also contain protein however, are listed elsewhere as vegetables, grains or nuts. Yellow Food


Ethnic food is abundant in plant based recipes. Especially Indian cuisine with traditional tried and true recipes is worth adapting. Hot spices warm us in winter and the curry contents have the immunity boosting benefits we need. Garam Masala is a ‘hot’ curry blend, that has a variety across India. Turmeric, among other benefits is believed to reduce the risk of cancer and Alzheimer’s disease. Chili pepper boosts healing properties; other ingredients, among them cinnamon and cardamom will ease digestion, burn fat and improve skin and nails. See recipe

You know a good recipe source, when it is quoted in several books. Candle Cafe and Candle 79 have great recipes and cookbooks, that are simply so good, that they are referenced by other authors. Wild Rice and Squash Salad

Thanksgiving is around the corner, I have been testing alternative recipes for a stuffing as I don’t like traditional stuffings with stale bread. This rice salad can be done in different ways. It gets more exotic with black rice. Wild red rice may cook faster. For the nutty ingredient, I used some beech nuts, which we had found during another Sunday morning run, however roasted pumpkin seeds fit the theme. Peeled beech nuts conserve surprisingly well, dry and cold in the refrigerator. Roasted carefully, they will shed their brown skin and become more digestible. Get the recipe
